 Sardine fry | മത്തി വറുത്തത് 


Preparation time - 30 minutes + 30 minutes for marination

Cooking time - 20 minutes


Ingredients:

Sardine / മത്തി  - 500g ( cleaned)

Green chilli / പച്ചമുളക്  - 2

Black pepper/ കുരുമുളക്  - 2 tsp

Garlic cloves / വെളുത്തുള്ളി  - 4

Ginger / ഇഞ്ചി  - 1/2 inch piece
 
Small onion / ചെറിയ ഉള്ളി - 4

Curry leaves / കറിവേപ്പില 

Green cardamom/ ഏലക്ക  - 3

Coconut oil / വെളിച്ചെണ്ണ - 1/4 cup

Salt to taste / പാകത്തിന് ഉപ്പ് 

Lemon juice / ചെറു നാരങ്ങാ നീര്  - 1/4 tsp

Method:

1. Add green chilli, pepper , garlic, small onion, ginger ,green cardamom and salt into a mixer . Grind it without adding water.
 



2. Marinate the sardine with this masala . Add lemon juice into it. Keep the marinated pieces for 30 minutes.

3. Heat a skillet / tawa on medium heat. Add coconut oil and curry leaves. Curry leaves will enhance the flavor of oil.

4. Add fish pieces and fry it until brown on one side.

5. Turn over the fish pieces and fry other side also.
 
6. Remove from heat . Fish fry is ready. Enjoy !!!

Homemade Pineapple Jam recipe  Ingredients: Pineapple puree - 2 Cup Sugar - 1 & 1/2 cup Pineapple essence - 1/8 tsp Lemon juice - 1/4 tsp     Method : 1. Cut the pineapple and add into a mixer . Blend well without adding water. Pineapple puree is ready.   2. Heat a Pan on medium heat and add 2 cups of pineapple puree. Stir continuously.   3. When it starts to boil , switch to low heat and add sugar. Mix well . Keep on low heat throughout the process. 4. Stir continuously until the mixture thickens . It will take 30 minutes approximately. 5. Add lemon juice and Pineapple essence. Mix well. 6. Turn off the stove. Let the jam cool down completely. Keep the jam in an airtight container .  Note: 1. Mix well and keep it aside. 4. Into a mixing bowl, add curd and brown sugar.  Whisk until the sugar dissolves completely.
