KERALA STYLE FISH FRY

KERALA STYLE FISH FRY

Preparation time : 1 Hour( Including marination)                                                                 

Cooking time : 30 minutes

Serves 4 - 5

INGREDIENTS:

Cleaned fish ( Fish steak) - 1/2 kg
Oil - 1/2 Cup
Curry leaves - 1 spring
Salt to taste

To make masala

Red chili powder - 2 tsp
Coriander powder - 1tsp
Turmeric powder - 1/2 tsp
Garam masala - 1/2 tsp
Pepper - 1tsp
Fennel seeds - 1/2 tsp
Curry leaves - 1 spring
Small onion - 1/4 cup
Garlic - 7cloves
Ginger - 1 inch piece
Vinegar/ Lemon juice - 1 tsp 

METHOD:

1. Grind all items under listed to make masala , by adding some water. Make a fine paste. Fish masala is ready.

2. Marinate fish with salt, curry leaves and fish masala. Keep it aside for 30 minutes.

3. Heat a skillet on medium heat. Add oil . When oil heats up, add marinated fish pieces.

4. Shallow fry the fish pieces till done or crisp on the outside. Flip the fish pieces to even brown on the other side also.

5. Fish fry is ready.

NOTE:

1. Keep the Skillet/ Tawa on medium low heat.

2. You can adjust chili according to your spice level.

    Kerala style Appam Recipe Ingredients: Rice (Idli rice / white rice) - 2 Cup Sugar - 3 Tbsp Salt - 1/2 tsp Instant yeast - 1 tsp Grated coconut - 1 cup Coconut milk / Water - 1& 1/4 cup Oil / ghee , for roasting Water as required ( Soaking & grinding )   Method: 1. WHOLE WHEAT BANANA CAKE   INGREDIENTS: Whole wheat flour - 1 ¾  Cup Mashed ripe bananas - 1 cup Honey - 1/2 cup Sunflower oil - 1/3 cup Eggs - 2 Water - 1/4 cup Baking soda - 1 tsp Salt - 1/2 tsp Vanilla essence - 1 tsp INSTRUCTIONS: 1. Preheat oven to 160 degree celcius (320 F). 2.  In a mixing bowl , add whole wheat flour, baking soda and salt. Mix well. 3. In an another mixing bowl, beat oil and honey together with a whisk. Add eggs and beat well. 4. Mash the ripe bananas with fork . Don't use mixer for this . Add mashed banana and vanilla essence. Beat well. DO NOT USE WHISK AFTER THIS STEP. 5. Add the dry ingredients into wet ingredients slowly and gently fold it using spatula. Add water slowly and fold it together with other ingredients.  6.
