Spicy Vegetable rice in 30 Minutes

INGREDIENTS:

Basmati rice - 2 Cup
Water - 4 Cup
Bay leaves - 2 
Cinnamon - 1 Inch piece
Green cardamom - 5
Cloves - 6  
Mace - 1
Coriander powder - 2 tsp
Turmeric powder - 1/2 tsp
Red chili powder - 2 tsp
Garam masala - 1 tsp
Salt to taste
Sliced onion - 2 (medium size)
Chopped tomato - 1 (medium size)
Green chili  - 2
Ginger garlic paste - 1tsp
Potato ( cubed) - 1 medium size
Cauliflower  - 1/2 cup
Fresh green peas / Matar - 1/2 cup 
Carrot (cubed )- 1 medium size
Frech beans - 6
Ghee - 4tsp
Oil - 2 tsp
Mint leaves - 1tbsp (optional)
Fried onion - 2 tbsp (optional)

METHOD:

1. Wash the rice 2 to 3 times in water and soak in water for 15 minutes. 

2.After 15 minutes drain the rice and keep it aside.
 

3. Heat a pressure cooker . Add ghee and oil.

4. When oil heats up add bay leaf, cinnamon, cloves, cardamom and mace. Saute it for few seconds.

5. Add sliced onion and saute it . When onion start to change colour add ginger garlic paste and green chilies. Saute it for a minute.

6. Add chopped tomato and saute it for 2 to 3 minutes. Add potato, carrot,cauliflower, French beans and fresh green peas.

7. Add coriander powder , turmeric powder, red chili powder and garam masala.

8. Mix well. Add basmati rice and mix well. The masala and ghee should coated on the each grain of the rice. Saute it for a minute.

9. Add water and mix well. Close the lid .

10. Cook on high heat until one whistle. 

11. Open the lid after pressure release completely. Add mint leaves and fried onion and mix well.

12. Enjoy the rice. You can serve it with raita.

NOTE:

1 . Adjust spice according to you taste.
2 . Choose vegetables that you like.

 Pepper garlic Mushroom fry Ingredients: Butter mushroom - 200g Coconut oil / Butter - 1 Tbsp Pepper powder - 2 tsp Soy sauce - 1 tsp Garlic minced - 1 Tbsp Chopped onion - 1/2 cup Chopped capsicum - 1/4 cup Curry leaves Salt to taste   Method: 1. Into a bowl add water and mushroom . Gently clean the mushrooms . Do not soak mushroom in water for long . Drain the water completely. Place the mushrooms on a cleaned kitchen towel . Cut the mushrooms into 2 parts  if the mushrooms are big in size. 2. Into a heated pan , add coconut oil.  3. When oil heats up, add chopped onion and saute for 2 minutes. Add garlic and capsicum.
