  Easy Potato fry | Easy aloo fry Ingredients: Potato cubed - 3 cup or 2 Medium size potato cubed Chili powder - 2 tsp Kashmiri chili powder - 1 tsp Minced garlic - 1 tsp Turmeric powder - 1/2 tsp Salt to taste Rice flour/ Corn flour - 1/4 cup Oil for frying Curry leaves - Few Method: 1. Peel the potato and wash it and cut it. Drain the excess water from potato. 2. Into a mixing bowl, add potato cubed, chili powder, turmeric powder, Kashmiri chili powder, garlic, salt and curry leaves. 3. Mix well and set it aside for 15 minutes. 4. Heat a kadai / frying pan on medium heat. Pour the oil into the kadai. 5. Before frying,  add Rice flour/ Corn flour into mixing bowl and mix it well. It gives an extra crunch to the potatoes after frying. 6. Fry the potatoes in batch by batch on medium heat. 7. Serve immediately.  Note: 1. Adjust chili powder according to your spice level. Kerala style Chammanthi Podi ( Coconut Chutney Powder)   INGREDIENTS: one medium size Coconut  OR  grated coconut - 2 & 1/2 cup Dried red chili - 20 to 25 number Urad dal - 3 tsp Salt to taste Asafoetida powder / Kaya podi/ hing- 1 tsp Tamarind  - ball sized ~ 1 Tbsp Curry leaves - few  METHOD: 1. Heat a heavy bottom pan on medium heat. Add grated coconut , dried red chilies ,  and curry leaves into the pan. 2. Roast it  for 2 to 3 minutes.  Add urad dal. 3. Add Tamarind after color of grated coconut changes slightly.  4. Roast until the coconut turns golden color. Add asafoetida. Roast for 2 to 3 minutes.Switch off the flame. 5.  Transfer the mixture into a plate & let it cool completely. 6. Add the mixture and salt into a mixer.  Pulse & blend to a coarse powder. 7. MINT APPLE MILKSHAKE | PUTHINA APPLE MILKSHAKE INGREDIENTS: Chopped Apple - 1 Cup  or One medium size  apple Few Mint leaves  ~ 2 Tbsp Chilled Milk - 1/2 cup Vanilla ice cream -  125 ml Sugar -  1 Tbsp Whipping cream - 2 Tbsp ( optional) METHOD: 1. Add all ingredients except whipping cream into a mixer and grind it into a smooth paste. 2. Pour the milkshake into a glass and garnish with whipping cream. Serve immediately. VANILLA CUPCAKE Preparation time - 08 Minutes Cooking time - 22 Minutes Total - 30 Minutes Makes 8 Medium size cupcakes WATCH VIDEO ON YOUTUBE   INGREDIENTS: All purpose flour - 125 g ~1 cup Powdered sugar - 125g ~10 tbsp Unsalted butter (room temperature) - 125 g~ 1/2 cup Egg (room temperature) - 2 (large) Vanilla essence - 1 tsp Baking powder - 1 1/2  tsp Baking soda -  1/4 tsp Salt - 1/8 tsp Milk - 2tbsp Cupcake liners (medium) - 8 METHOD: 1. Preheat oven at 170 degree celcius. 2. Add butter and eggs into a medium size mixing bowl. Beat it with wired whisk or an electric beater until the mixture become light and fluffy. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. 3. Add sugar and beat it. Add vanilla essence and milk . Whisk until all ingredients  are well combined. 4. Sift and add all purpose flour, baking powder, baking soda and salt . Whisk until all ingredients are well combined.

Spicy Vegetable rice in 30 Minutes INGREDIENTS: Basmati rice - 2 Cup Water - 4 Cup Bay leaves - 2  Cinnamon - 1 Inch piece Green cardamom - 5 Cloves - 6   Mace - 1 Coriander powder - 2 tsp Turmeric powder - 1/2 tsp Red chili powder - 2 tsp Garam masala - 1 tsp Salt to taste Sliced onion - 2 (medium size) Chopped tomato - 1 (medium size) Green chili  - 2 Ginger garlic paste - 1tsp Potato ( cubed) - 1 medium size Cauliflower  - 1/2 cup Fresh green peas / Matar - 1/2 cup  Carrot (cubed )- 1 medium size Frech beans - 6 Ghee - 4tsp Oil - 2 tsp Mint leaves - 1tbsp (optional) Fried onion - 2 tbsp (optional) METHOD: 1.  Chocolate mocha mousse with cocoa powder INGREDIENTS: Water (cold) - 1 tbsp Unflavored gelatin - 1 tsp Whipping cream (cold) - 1 Cup Cocoa powder - 1/4 cup Powdered sugar - 3/4 cup Vanilla essence - 1tsp  Water boiling - 2 tbsp Instant coffee powder - 1 tbsp METHOD: 1. Add cold water and gelatin into a bowl, let stand 1 minute to soften. 2. Add coffee powder to boiling water and make coffee decoction. 3. Add coffee decoction into gelatin mix and mix well. 4. Stir together sugar and cocoa powder in medium size bowl ; add whipping cream and vanilla essence. 5. Beat on medium speed of electric mixer, scraping bottom of bowl occasionally, until mixture is stiff. 6.  Pour in gelatin mixture; beat until well blended.  7. Spoon into serving glasses. EGG STUFFED BUN INGREDIENTS: Egg - 1 nos Melted butter - 2 tbsp For making Bun: Hot water - 1/2 cup Milk ( room temperature) - 1/2 cup Active dried yeast - 3 tsp All purpose flour / Maida - 3 cup Oil/ Melted butter - 2 + 1 tbsp Water - 1/4 cup or required Salt - 1/2 tsp Sugar - 1tbsp For making Egg masala: Boiled eggs - 4 Nos Chopped onion - 2 (medium size) Capsicum - 1/4 cup ( used green one) Ginger garlic paste - 1tsp Turmeric powder- 1/2 tsp Chili powder - 1tsp pepper powder - 1tsp Coriander powder - 1 tsp Dark soy sauce - 1 tsp Tomato ketchup - 1 tbsp Water - 2 tbsp Salt to taste METHOD: 1. In a bowl add hot water, milk , sugar and active dried yeast and mix well. Keep it aside for 10 minutes. 2. The yeast will active in 10 minutes.
